Winter bamboo shoots, a seasonal favorite among Wuxi residents, have begun appearing in local markets in recent days, offering a fresh taste of the colder months.
The first batches this season come from neighboring Zhejiang province. Homegrown shoots, also popular among residents, are expected to reach markets early next year.
Small in size and often still covered in soil, winter bamboo shoots are prized for their tender texture, delicate flavor and crisp bite. They are a versatile ingredient in Wuxi's home cooking.
One popular dish is "yanduxian", a hearty soup made with bamboo shoots, cured pork, pork ribs and tofu skin knots. Another local favorite combines the shoots with preserved mustard greens and green soybeans in a savory stir-fry, often served with rice. They also feature in dishes such as bamboo shoot and cured pork fried rice, braised bamboo shoots and bamboo shoots with smoked pork.

How to choose fresh winter bamboo shoots?
It is simple: check their weight, appearance and firmness. Good ones should feel heavy and solid for their size, with short, plump shapes and tightly wrapped, yellow-brown husks. Their tips should not be green, and the bases should look fresh rather than dark or sticky.
A gentle press with a fingernail near the base can help assess tenderness. Fresh bamboo shoots should yield slightly when pressed. Avoid those that feel hard and woody, have peeling husks or emit a strong sulfur-like smell.
Winter bamboo shoots can lose their tenderness and become woody over time, so it is best to enjoy them soon after purchase.
